El Tunel
20 small-scale coffee producers from Chalatenango
STORY
El Tunel is an important coffee-producing community in the Chalatenango region. Here the producers are very focused on improving their quality and productivity. The story goes that this area acquired its name after a tunnel, that served to cross from one side of the mountain to the other, collapsed leaving producers without access and communication Later, the community came together to reestablish the road and be able to travel. Today, the community has better access routes that allow them to travel safely and transport the coffee for sale.
The producers that contribute to El Tunel blend are small and medium sized producers with less than 4 hectares, on average, available for coffee production. Varieties such as Pacas, Bourbon and Catuai are mainly grown here, varieties known for their sweet profile and high productivity In addition, these producers ferment, the coffee for more than 24 hours and dry their coffee for around 13 days, using a combination of raised drying beds and concrete patios.
