STORY

Within the mountainous region of Huila lies a town called San Adolfo, located in the municipality of Acevedo. The region is surrounded by many rivers, providing it with a reliable water supply. This area is home to some coffee growers that work very hard to produce one of the best coffees in the world, called Los Guácharos.

Los Guácharos owes its name to the national park located near San Adolfo, called Guàcharos Cave, famous for its exotic fauna. Guácharo is also the name of the bird that lives in these caves. They rest the whole day inside these dark and deep caves and at night go out in search of fruits and other food.

“Los Guácharos starts with a vibrant cantaloupe taste which is interrupted with grapefruit acidity. It has a syrupy, dulce de leche sweetness”.

Processing Method

Traditional fully-washed process in micro-mills at each farm. Fermentation in cement tanks with ceramic tiles for 18 to 24 hours depending on farm.

Shade

Plantain, Chachafruto, Guamo and Nogal trees (40% shade cover).

Drying Method

Fully dried at each farm in green-house style drying patios.
