In the mesmerizing coffee community of San Pedro El Alto in Oaxaca is Finca El Miramar, owned and operated by Guadalupe Santos Perez. With over 20 years of experience, Guadalupe is a hardworking and passionate smallholder farmer. Her journey into the world of coffee began in her childhood when she inherited a piece of land from her parents, and today she proudly says, “I am a coffee producer, and that fills me with pride!”
Driven to increase her income and improve her livelihood, Guadalupe took it upon herself to improve her processing methods and deepen her understanding of coffee quality. When she joined Caravela’s supply chain three years ago, she began learning the best practices for achieving exceptional quality. Previously, she sold her coffee locally to buyers focused on commercial coffee.
Today, Guadalupe uses selective picking and pays close attention to the cleanliness of her micro mill and equipment, from the pulper to plastic fermentation tanks. Guadalupe has found that a 24-hour dry fermentation (without water) produces remarkable results for her coffees. After fermentation, she patiently dries the coffee on shaded cement patios over palm mats for over six days. Currently, 80% of her farm is planted with the Pulma Hidalgo (Typica) variety, while about 20% is grown with the Catimor variety.
