Macedonio, a dedicated farmer with more than two decades of experience, has been dedicated to the production of specialty coffee for more than three years. He currently works alone at the farm as his wife, Cecilia Santos, her right hand, passed away. Thus, driven by his passion for excellence, he has improved his processing techniques, resulting in higher-quality coffee.

To increase productivity, Macedonio plans to gradually expand his coffee plantations. Located in the beautiful coffee community of Malvarisco, he implements traditional processing practices, carrying out dry fermentation (without water) for about 36 hours and drying the daily batches on palm mats, or in Spanish, “petates,” which are very common and traditional in Mexico.

Macedonio says he grows and processes only the revered Typica variety, which is highly prized in the region and sets his coffee apart. In the off-season, he dedicates himself to other farming activities and enjoys precious moments with his grandchildren. He hopes his customers appreciate his coffee and become long-term supporters of his path.
