Milton Monroy comes from a traditional coffee growing family and has always been surrounded by coffee. Milton is always trying to improve and achieve better results in life.Milton started his journey in coffee with a traditional coffee farm but throughout the years, made the change to specialty coffee seeing the opportunities of growth. San Cayetano Alto, his farm, is located near the city of Ibague, along the skirts of the central mountain range of Colombia with a view to the snow-capped mountain of Nevado del Tolima. This area has special and ideal climaticcharacteristics that can contribute to the production of amazing coffee.
In his endless pursue of knowledge to understand coffee and processes, he has been able to produce high-quality coffee. This coffee is an example of such endeavor, where he has worked in favor with the environment to understand the right times for drying and fermentation. Also,looking for the outmost best, he hascarefullytrained his cherry pickers to select the best quality and perfectly-ripe cherries and even doing a second selection before fermentation. He wants to continue his quest to produce better quality coffee and so continues to improve his processing facilities and drying area.
