William’s passion for coffee was instilled by his parents from an early age. Later on he studied to become a coffee taster and it was here that he discovered the world of specialty coffee and its complexity. With this in mind, he decided to change the goal of his farm, Los Pinos, to start producing high quality coffee. He saw an opportunity of improving the quality of life of his family, his biggest motivation, and so he took the leap. Since then, he has made improvements such as the management of the coffee waste waters and coffee cherry pulp. For William, taking care of the environment is a must and so he forbids chopping down the forest, taking care of native animals and having an environmentally friendly farm. To achieve this later part, the family is very important, as each member plays a key role in the farm. William’s father and three brothers oversee the crop -cleaning and pest management-, his mother and wife oversee the cherry selection and drying area, and he takes care of the fermentation processes.
The next step William wants to take, is to make improvements to the infrastructure and increase the area of the farm to plant other varieties. He wants you to come visit the farm to experience first-hand the work him and his family are putting to achieve the quality of the coffee you’re about to taste.
